Winemaker's Notes
The majority of the grapes were sourced from vineyards near
Beamsville, with a portion of the Cabernet Franc from Norfolk County. All aging was done in a combination of French and American oak barrels, with the fruit from Norfolk County being held in barrel for over one year.
Tasting Notes
Medium ruby, hints of purple, with delicate legs. Beautiful aroma of black cherry, red pepper, and subtle raspberry. Finish of red plum, tart blackberry and sweet strawberry.

Crisp, refreshing and always pleasurable with lots of citrus, minerality and a light body.
Beaver Party is a wine best enjoyed when served cold and is a perfect picnic - patio - warm summer day type of wine.
Perfect as an aperitif or as an accompaniment to fish, seafood and vegetable entrées, as well as with fresh cheeses or grilled white meats.

Winemaker’s Notes
Riesling’s sweetness with balanced acidity makes it the perfect companion for spicy food. Strong Indian and Asian spices match beautifully with this wine. Youthful character, refreshing acidity, medium-bodied mouthfeel and seductive aromas are hallmarks of this wine.

The majority of the grapes were sourced from vineyards in Niagara, some from the vineyards we manage in Norfolk. Fermented in stainless steel. Final aging was finished in stainless.

NOSE - Lifted aromatics jump from the glass, with hints of pear, golden delicious apple, and citrus zest
MOUTH - A slightly off-dry initiation works well with vivacious acidity, apparent citrus fruit and a pleasant lingering finish

Winemaker’s Notes
Calling Blushing Beaver “food-friendly” is sort of like calling ketchup “burger-friendly” but in this case, it’s not totally wrong. Blushing Beaver falls in between the extremes of red and white - less intense than a big, tannic, mouth-busting red, but with more depth than a super-light white. Just make sure you give it time to chill before drinking (like you would with a white wine). Red fruit and floral aromas dominate the nose, while strawberry rhubarb coats the palate. It’s the perfect barbecue wine, the perfect beach wine, and the perfect picnic wine, but it’s also the perfect sitting-around-watching-TV wine.

Primarily aged in stainless with a portion aged in a combination of French and American oak, which softens the tannins and polishes the mouthfeel. An approachable and well structured deeply flavoured red wine. Pairs well with pork, beef, medium-bodied cheeses, and good friends!

Tasting Notes
Pale gold in the glass with a slight greenish cast, with an elegant smell of vanilla, with aromas of apple developing as the wine gets more air. Taste is smooth with decent acidity and flavours of apple and fresh citrus on the palate. The wine is absent in heavy oak influences, making it a totally enjoyable Chardonnay

The majority of the grapes were sourced from Beamsville and Niagara-on-the-Lake, with a small percentage from vineyards in Norfolk County. Fermented and aged in oak. All aging was finished in 225 litre French and American oak barrels, moving to larger French barrels for final finishing.

Tasting Notes

All aging was done in a combination of French and American oak barrels, with the fruit from Norfolk County being held in barrel for over one year.
Aged in French oak for twelve months, this wine drinks beautifully now and will benefit from cellaring.
Although the individual components are great blending partners, we ferment and age every component of both varieties of this blend separately until final blending just prior to bottling
Tasting Notes
Nose of dark berry fruits, with hints of anise and forest floor earthiness. The palate is elegant with fine tannins and persistent length.
Merlot adds chocolate and rich, fruity flavors to the wine, while the Cabernet Sauvignon makes the wine tannic, age-worthy, and powerful. Cabernet Franc adds distinct acidity and dark-fruit flavors.
Food Pairing
Best with beef, lamb and game, and will also pair well with dishes enhanced with black pepper and cloves. Other great pairings include rich duck, quail, roast lamb and beef.

The Cabernet Franc and Cabernet Sauvignon were sourced from vineyards on the Beamsville Bench and near Vineland, with a bit of the Cabernet Franc from vineyards we manage. Dried with airflow only for over 30 days with final Brix averages of 29.3 (Cab Franc), 27.5 (Cab Sauv) and 34.2 (Merlot). All aging was finished in French and American oak barrels for almost five years.

Deep garnet colour with a ruby depth. White pepper and maraschino cherry opening up to dark chocolate. Smooth warmth, candied red cherry, notes of cranberry with a balanced finish of berry.

Tasting Notes
Garnet colour with a bouquet of black currant and cherry wrapped around notes of subtle oak. A dry, medium to full-bodied wine with firm but correct tannins, good structure and moderate acidity accented by traditional herbaceous notes. The dry lingering finish adds very subtle notes of black tea and spice.
